Baked Apples with Cinnamon Ice Cream Recipe

Baked Apples with Cinnamon Ice Cream provide a complimentary Fire and Ice ending for a hot summers evening. Apples baked in the BBQ while the rest of the meal is being prepared are an easy low maintenance desert that is sure to please. The Cinnamon Ice Cream or another complimentary flavor may be prepared a few days ahead of time or purchased for the occasion.Ingredients
- 6 Apples (Northern Spy)
- ¼ cup Pecans (chopped)
- ¼ cup Raisins
- ¼ cup Brown Sugar
- 6 sprigs Mint
- Cinnamon Ice Cream (recipe)
- ¼ cup Butter
Instructions:
- Core apple by removing the top stem and core of the apple. Leaving the base of the apple intact will keep the apples stuffing pooled in the center of the apple, imparting as much flavor as posible.
- Stuff each apple with a mixture of Pecans, Raisins and Brown Sugar, topped with a small piece of butter.
- Wrap each apple in foil (shiny side up).
- Place on grill in a warm, out of the way place at the start of grilling. Leave on, rotating and moving around, to povide an even heat as the rest of the meal is prepared.
- When ready remove from heat, cut into quarters on a plate and top with cinnamon ice and a sprig of mint or other garnish.
